Spring NoteApril 15, 2008 Connecticut River shad roe should be in by the end of this week. We slowly pan fry it in clarified butter and olive oil, moisten it with a meuniere sauce of shallots, parsley, lemon and yes, butter, and garnish it with crisp Hobbs bacon, pan-crisped new potatoes and watercress. The season for this delicacy is short--about two weeks-- but what a treat! Be sure to call for availability and to reserve your portion if they have arrived. Chesapeake Bay soft shell crabs will be here at the end of April or the beginning of May. Alaskan halibut, snowy and delicate, is here now as are juicy Delta asparagus. April is the prime season for them. Half Moon Bay spring peas and favas will be here soon. Sweet little artichokes are here now along with green garlic, young garlic shoots that are full of flavor without the linger.
